South of the Border Wannabe

I'll be the first to admit this isn't a totally original idea (think Cafe Rio), but I made it my own and wasn't really trying to copy anyone.

The other night I made pulled pork (my FAVORITE meat - recipe here) and I separated some out before adding our BBQ sauce.

With this plain pulled pork I decided to make:
SALSA VERDE PULLED PORK BURRITOS
Prep Time: 10 min Cook Time: 35 min

Ingredients:
Pulled pork
Tortilla's (our favorite are the uncooked tortilla's that we can make fresh - I'll never go back!)
Salsa Verde (we like the Herdez kind - it is very mild and also pretty cheap - around $1.70 at Walmart) 
White Cheese (we used mozzarella but next time we want to use a stronger white cheese like jack cheese)

Directions:
Depending on how many servings you are making, get a rectangle baking pan (we like the small 7 X 11 but any pyrex, cake, brownie, etc. pan will work).
Fold the tortilla's like a taco to make them easy to fill.
Fill with pork, cheese, and sauce.
Wrap or fold the tortilla's so the edges are on the bottom.
Cover with more sauce and top with cheese.
Bake at 350 for 30 min and then broil for about 5 min or until the cheese is browned and bubbly
Serve on a bed of lettuce and top with ranch or salsa (or however you like it)

Ideas
  • add jalapenos, pico de gallo, bean (yuck) or any thing else you might like into the burritos
  • I am going to try a recipe for Cafe Rio type rice as well as their dressing

I {heart} Pulled Pork

I have a bit of an obsession with BBQ Pulled Pork.
Really, I could probably eat it every day - sadly.

I found the most delicious (and easiest) recipe - you're going to love it!

BBQ Pulled Pork
Ingredients:
Pork shoulder/butt (size depending on how much you want to make)
Garlic Powder
Pepper
2 liter of root beer (or any soda will work)
1 (12 oz) bottle of your favorite BBQ Sauce

Directions:
Place pork in crock pot
Rub garlic powder and pepper to the whole surface of the pork
Fill with root beer until level with the top of the pork (I don't fill mine to cover the top)
Cook on low for 6 - 7 hours  when the meat is well cooked and shreds easily (this will vary depending on your crock pot, but this is one meat you can't cook too long. I usually put mine in around 8:00 in the morning and we don't eat until about 6:30)
Pour out the soda and shred the meat
Add BBQ and let simmer and warm for another hour (this can vary as well - it's really just to warm the sauce, but the longer it simmers the more it cooks in)

From this point you can really do whatever you want: Sandwiches (our favorite), salads, just plain, etc. You can also take out pork prior to adding the BBQ sauce and use in even more ways (like the Salsa Verde Pork Burritos) since it doesn't really have a distinct taste and you can add whatever sauce/flavors you want.

Tips:
  • the meat is super tender, so the more you stir it the more shredded it gets - if you like it more chunky handle with care
  • I'm sure it would be delicious with homemade BBQ sauce - one day I'll try that
  • It's also common to put coleslaw on top as well
